After a workout at the gym, I splurged and ordered something new from their health bar, an acai bowl. My fellow workout ladies and I swooned over how good it was. Since then, I decided to attempt to make one myself and experimented my way to this recipe. I love that it packs so much healthy goodness and tastes fresh and delicious! Whenever I make it for someone, they ask for the recipe. Make one for yourself and you’ll be hooked!

First blend spinach and water before adding other ingredients to minimize spinach chunks. If you are one of those lucky ones who have a high quality blender, you can wait to blend until all ingredients are added.

Add banana, frozen berries, acai powder (I got mine through Prime here) and ice. Blend. Pour into two bowls. If I only need one serving, I’ll save the excess for the next morning and just blend it with ice OR since my kids like the smoothie itself (without toppings) I’ll often share the extra smoothie blend with them. Anything to get them to eat greens!

Top acai smoothie with granola (these are my two favorites Bear Naked PB and KIND PB). Then add berries and banana. Drizzle with honey. Snap a pic and share on social media since they always look so pretty. When you’re telling your friends about your new fave breakfast, acai is pronounced ah-sigh-ee, in case you (like me) didn’t already know. Enjoy!

Acai Bowl

(Makes two bowls)
Servings 2

Ingredients
  

  • 1 cup spinach
  • 1 cup water
  • 1/2 banana
  • 1 cup frozen mixed berries
  • 1 tsp acai powder
  • 1 cup ice
  • 1/2 cup peanut butter granola
  • 1 cup fresh fruit for topping (raspberries, banana, blueberries, strawberries)
  • 2 tsp chia seeds
  • 2 tsp honey

Instructions
 

  • Blend spinach and water. 
  • Add banana, frozen berries, acai and ice and blend
  • If too watery, add ice and blend. If too thick, add water and blend.
  • Pour into bowls. Top with granola, fresh fruit, chia seeds and drizzle with honey
