Supplies and Ingredients for Goat Cheese Shamrocks:

Supplies:

Ingredients:

  • Olive oil – approximately one cup – add more or less depending on the size of serving plate. You just want the cheese to be sitting on top of olive oil and drizzled with it

  • Goat cheese – 8 ounce log
  • Honey – if you like a kick, you can use hot honey

  • Fresh basil – 2 Tbsp or to preference

  • Italian seasonings 2 Teaspoons

  • Crushed red pepper 1teaspoon

  • Chopped pistachios – approximately 1/2 cup

  • Lemon zest (optional) – around 2 teaspoons

  • Crackers or toasted baguette slices for serving

Instructions:

  • Fill the shamrock molds with goat cheese and place in the freezer
  • Use remaining goat cheese to scoop into four heart molds. I placed equal amounts in the bottom of each. There won’t be enough to fill them. Then use plastic wrap to press the cheese down into the heart molds. Leave the plastic wrap on them and place in the freezer.
  • Once cheeses are frozen solid and you are ready to assemble your appetizer, remove them from the freezer and carefully remove the frozen goat cheeses from the silicone molds.
  • Mix the oil with the italian herbs, salt and crushed red pepper.
  • Drizzle some of the seasoned oil over the serving plate.
  • Add the heart shaped goat cheese in a four leaf clover shape over the oil.
  • Scatter the shamrock cheeses around the four leaf clover.
  • Drizzle the cheese with more of the oil mixture.
  • Top with chopped pistachios.
  • Drizzle with honey
  • Grate lemon zest over the top.
  • Sprinkle with fresh basil

Serve with crackers or toasted baguette
